Braai Shisa Nyama BBQ Barbecue Zululand – Before recorded history early man put meat on a fire to cook. It was very much a social event then as it is today. A South African braai or shisa nyama are evolved forms of a BBQ (barbecue). The braai originated from the Dutch settlers (Afrikaners) and Shisa Nyama from the Zulu.

Braai is a shortened version of “braaivleis” which literally means to grill meat. Traditionally it is to socially cook over burnt wood or charcoal. However, from ease of effort, many cook over an outdoor gas stove. This simple form of cooking has taken a turn, and top quality meals are produced and enjoyed with a variety of good wines. Unfortunately, in South Africa it has become a practice with men cooking the meat around the braai and women preparing the side dishes, salads and desserts. A braai takes place anywhere, be it at home, at a sports event, on the beach or in bush.

Some braai flavours are a result of other cultural influences, the Cape Malay and Indians, who came here 140 years ago with the Indian Indenture.

Shisa nyama in Zulu means to burn meat. Within South Africa you may find chisa or chesa nyama which is basically the same thing in another language. Once again this form of cooking is a communal event developed from kasi (township) culture, and more than a culinary experience it is an actual place of business. You select your meat and it is then cooked on open fires. No two shisa nyama outlets are the same. Normally there is a butchery and car wash associated with the eatery. You share your food, invariably eat with your hands and wipe them on the table cloth with help of a bucket of water.
